Gheymeh Nesar is a Persian dish from the city of Qazvin located in the northwest of Tehran capital of Iran. Qazvin like many other cities in Iran is famous for its historical monuments, its food, and pastries.
This delicious food consists of diced meat (lamb or beef), sliced almond and pistachios, Iranian famous barberries, Zereshk, sliced orange peel (optional) all served with steamed rice.

This recipe serves 4 persons:
preparing rice in Persian style:
Wash 1.2 cups white basmati rice, add 3 cups of water and 3-4 tablespoons of salt (don’t worry about the amount of the salt, it will eliminate
later), set aside for 3-4 hours.
preparing Zereshk (barberries):
Wash one cup Zereshk and place in a skillet or small pan, add 2 teaspoons sugar, 3 tablespoons butter, 3 teaspoons water and place on medium heat and let them cook, fry, and get soft. Set aside.
Preparing almond and pistachio mixture:
Mix 8 tablespoons sliced almonds, and 8 tablespoons sliced pistachio (you can simply find these products from Persian grocery stores all over the world) with one tablespoon rosewater in a bowl and set aside.
Chop one onion and saute till getting golden, take half of it, and set aside for later. Add the diced meat to the rest of the fried onion and saute, add saffron, turmeric, half of the almond mixture (4 tablespoons), and 2 cups of water and let it cook. Close to the end of its cooking time, add half of the prepared Zereshk, 2 teaspoons ground cinnamon, 2 teaspoons cumin, 3-4 teaspoons rice spice (you can buy from Persian groceries or you can add one teaspoon more cumin, one teaspoon more cinnamon plus one teaspoon powdered rose paddles), add one tablespoon tomato paste as well and let it cook for the more minutes left. The meat will not have any juice. Meat is also ready, you can set aside.
Fill 3/4 of a pot which is good enough for 4 person meal with water, and bring it to a boil. Drain the rice which was in salted water, and add to the boiling water in the pot and let it boil for about 10 minutes. You can check the softness of the rice between your fingers, we need rice neither very soft nor not-cooked, it is in between. At this point drain it and set it aside.
Add 3 tablespoons of vegetable oil or oil of desire to the pot. Mix 4 tablespoons of yogurt, one egg, and 2 teaspoons saffron (Powdered) in a small bowl, then add it over the oil in the pot. Add some rice and smooth it with a help of a spoon to fill the bottom of the pot and mix with yogurt mixture at the same time.
add some rice over the prepared tahdig, add some meat, some Zereshk mixture, some almond mixture, and some fried onion. Again add some rice and repeat the same steps till all ingredients added to the pot. Cover the lid and place on medium heat and cook for about 30-45 minutes till it cooks and tahdig gets ready.
Serve in your favorite serving dish and decorate it with some remaining almond and Zereshk mixtures.
